This Hot Spinach and Artichoke Dip is delicious, fast and easy to make. You can make it quickly on the stove top and add it to a sourdough bowl or you can add all the ingredients into a crock pot and let it simmer on high for 45 minutes. This is great with tortilla chips or sourdough bread. Once you make this, you will find that you will make it often.

Ingredients
- 1 8oz Cream Cheese Softened
- 1 16oz Sour Cream
- 1 1/2 Cup Parmesan cheese Grated
- 1 Stick Butter
- 1 10oz Frozen Spinach Thawed, squeeze out water
- 1 14oz Artichoke Hearts Chopped
- 1 4oz Green Chilies Diced
- 2 Tbs garlic Minced or Chopped

Instructions
- In a pot, set to medium heat, add the butter and cream cheese. Once that has softened and mostly melted, add the sour cream and gently stir. Add garlic, green chilies and artichoke hearts. Continue gently stirring to make sure the flavors mix throughout and then add the chopped thawed spinach. Once the spinach has been mixed through out, add the parmesan cheese and set the heat to low. Let it gently simmer but not to the point that it bubbles strongly. Taste and season with salt or pepper as you prefer, I sometimes add a little garlic salt to it myself. Enjoy!
